SPICY STIR-FRIED CORN WITH GINGER AND PARSLEY

Spicy Stir-Fried Corn with Ginger and Parsley IMG_1570

Who says you can’t have corn in the winter? Just use frozen corn and you’re good to go!

ingredients

4-5 ears of corn cut off the cob (summer), or 1, 1 lb bag of frozen corn (off season)

1 T vegetable oil

1 T chopped fresh ginger

1/8 t red pepper flakes

1 T lower-sodium soy sauce

¼ cup chopped parsley

directions

Using a wok or frying pan, heat the oil until hot. Add ginger and cook for about 30 seconds. Then add the corn and red pepper flakes. Stir to combine. Cook for about 5 minutes or until the corn starts to slightly brown. Stir in the soy sauce; sprinkle with the parsley and serve.
